Sydney CBD gets a "New York-style" wine bar


There is a new wine bar in the Sydney CBD, and it is inspired by the drinking palaces of New York City.

Georgie is a "New York-inspired neighbourhood wine bar" on the corner of George Street and Bond Street, taking up a ground floor frontage.

The 60-seater fit out features "a moody colour palette" with marble, velvet, and gold shades and retro white and black tiles.

Thirsty Sydneysiders are promised a constantly evolving wine list featuring both New World and Old World wines. The cocktails list offers takes on classic Martinis and Manhattans served in vintage glassware.

“We didn't want Georgie to be constrained by a particular theme, instead we are pouring wine that we are loving at that moment," says general manager Susie Shelley.

There will also be benchmark wines poured using a Coravin system.

The by-the-glass selection includes names like Brokenwood, Tar & Roses, Vasse Felix, Dalrymple and Bowen Estate, along with Champagne Taittinger.

Formerly of Shell House and Aria, Parisian-born head chef Gil Ghidalia is well versed in classic European wine bar offerings. He has played with the New York connection while maintaining a produce-driven, down-to-earth approach with the menu.

“Our menu oozes personality and character, welcoming people in from the bustling streets," he says. "We are offering commuters and local corporates an immersive all-day experience to entice them to stay and play in the CBD.”

Think share plates including surf and turf skewers, a classic prawn cocktail, and a Luger-inspired steak frites with a side of kohlrabi Waldorf.

Ghidalia also has plans for a mystery snack to be available in evenings from the street-side window for those on their way home, suggesting a '"Reuben eclair" or a "Rockefeller toastie".

Georgie Wine Bar is located at Mantra 2 Bond Street, on the corner of George Street and Bond Street. It will be open seven days a week.
