Wilmot Hills Distillery is one of the more rustic attractions in Tasmania.
Situated 40km south of Devonport and on the road to Cradle Mountain, it was established as a winery 1991 by John and Ruth Cole, but has been operating as a distillery for six years.
It was purchased by South African-born Jo Louw in 2019 and he makes handcrafted gins, apple brandy and absinthe, among other products.
Louw travelled the world as a building engineer but had long held a desire to make his own spirits.
The property is also home to a an old workers cabin which is now used as an Airbnb. It is adjacent to the owner's cottage situated on the 9.5 acre working apple orchard and distillery.
Private free tastings at the distillery are included the accommodation tariffs.
The accommodation is also rustic, sharing facilities in the owner's cottage including for wifi, laundry, bathroom, kitchen, lounge and dining facilities.
The property is pet-friendly, the owner has a border collie puppy Jet, who loves visitors and exploring the orchard with 300 apple trees boasting 11 different varieties.
The cellar door is open six days a week (closed Wednesday) and all spirits are fermented, distilled and aged onsite.
