An iconic Sydney hotel will re-open its doors later this month as part of the triffid-like Merivale Group.
The Collaroy, on the northern beaches, dates back to 1915 as part of the Arlington Amusement Hall. It has undergone several transformations including being called 1066 and the Surf Rock Hotel, as well as The Collaroy, which was purchased by Merivale boss Justin Hemmes late last year.
With sweeping views of the ocean and the beach on its doorstep, The Collaroy joins The Newport as part of Hemmes' northern beaches collection.
The new-look hotel will aim to be "a vibrant beachside destination for those who love to be by the shore" and hopes to strike the right balance between being hip and family-friendly.
Executive chef Jordan Toft said he has taken inspiration from the venue’s spectacular location, describing the food as “simple, yet elegant food for a community that loves the sun, surf and sand”.
The Collaroy's ground floor will have an evolving offering throughout the day. For breakfast, the kiosk will serve coffee, juice and house made pastries, alongside pizza bases with fresh breakfast toppings.
Healthy lunches will be followed by snacks like freshly sliced prosciutto and grissini, ham croquettes with spicy aioli and anchovy toasts with pickled shallot.
The dinner menu will change daily. Think lamb and eggplant moussaka as the special on Mondays, pork and fennel sausages with roasted pumpkin and green garlic on Tuesday, or a coastal take on the Sunday roast.
Upstairs, guests will find an open kitchen and two bars to choose from. Here, they can enjoy freshly shucked oysters, local seafood, meats from the charcoal grill and salads; or take it easy with a burger from the bar menu and enjoy the surf views.
Vinnie’s Pizza, the authentic wood-fired creations by Vincenzo Biondini can be enjoyed throughout the day and night.
The wine list is promised to be "classic" with a focus on fresh, crisp whites and rosés, while the drinks menu will be created by the best and brightest bartenders from The Newport, Papi Chulo and Coogee Pavilion.
The exact open date of The Collaroy has yet to be announced shortly but rstaurant reservations are taking bookings from May 19 via www.merivale.com.au/thecollaroy.
