From a country that was known for mass-produced rums and rudimentary brandies to a nation of high-quality artisan distilleries, the Australian spirits industry has made huge strides in recent decades.
Over the past 25 years, thanks in no small part to Bill Lark's pioneering efforts in Tasmania, there are now over 50 quality producers of gin, whisky, vodka, brandy and other more exotic spirits spread from the Kimberley in Western Australia to North Queensland.
